Baked Peach Oatmeal


A friend passed this recipe on to me and I tweaked it just a bit to my liking.  It is delicious!  You can save the leftovers and eat from it for several days after.   It is great reheated or eaten cold straight from the fridge.  Add an extra splash of almond milk for extra creaminess.


  

Baked Peach Oatmeal
2 c. old-fashioned oats
1/2 t. salt
1 t. baking powder
1 t. ground cinnamon
1/4 c. chopped almonds
2 c. unsweetened almond milk
1/4 c. maple syrup
1 egg (or flax egg)
3 T. coconut oil, melted and cooled slightly
1 t. vanilla extract
1.5 c. chopped peaches
peach slices for the top, optional

Preheat the oven to 350.  Lightly oil mist an 8x8 baking dish.  In a medium bowl, mix together the oats, baking powder, salt, cinnamon and almonds.  In another medium bowl, whisk together the almond milk, maple syrup, egg, coconut oil, and vanilla extract.  Arrange the chopped peaches on the bottom of the baking dish.  Pour the oat mixture evenly over the peaches.  Pour the almond milk mixture over the oats.  Gently shake the baking dish to make sure the milk covers the oats evenly.  If desired, add a few sliced peaches to the top of the oatmeal.  Bake for 40 minutes, until the top is golden brown and oatmeal is set.  Let cool for 5 minutes and serve.
