Taco Soup / Taco Seasoning



Ingredients
1 can black beans drained
1 can pinto beans drained
1 can kidney beans drained
1 medium onion, chopped 

2 garlic cloves, finely chopped 

2 tablespoons taco seasoning (I make my own – see below) 

2 cups low-sodium vegetable broth 

2 small zucchini or summer squash, cut into small cubes 

1 (14.5-ounce) can diced tomatoes 

1 cup frozen corn kernels
1 cup medium salsa
Method
In a large pot, sauté onion and garlic until onion is translucent. Add drained beans to pot and sprinkle mixture with taco seasoning to blend. Add remaining ingredients and simmer, covered, stirring occasionally, 15 to 20 minutes.
Taco Seasoning

Mix Together:
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper
Store in an airtight container if you don’t use immediately.
