So, What Are You Feeding Your Kids For Lunch?

For many of us moms, as summer rolls around, we are SUPER excited to not be packing lunches anymore! The prep work the night before, making sure the right lunch bags go into the correct book bag, and washing those smelly containers after school is put on pause for summer vacation!
Unfortunately our kids still have to eat (ha!), so we are left with what to prepare for lunch!  We do find ourselves still packing for play dates, pool outings, and running errands (a packed lunch in our cute containers are our new version of drive thrus.)  So, with a little more time and a microwave and stove option, these are our favorite quick summer lunches to feed our kiddos!

Peanut butter between quinoa rice cakes
Cheese toast (almond cheese, cheddar kind)
Almond and Coconut yogurts w/granola
Roasted potatoes ("french fries")
Baked sweet potato fries
Veggies and hummus
Tortilla with rice, beans, corn, almond cheese
Muffins - the choc vitamin muffins in freezer section my kids love or I make them
Spaghetti - I make a big batch and reheat as needed
Smart dogs
English muffin pizzas - in toaster oven (or use Deli Flats)
Waffles - want to try putting banana strawberry fluff between them soon
Steamed cabbage (milder than other greens)
Corn on cob
Apple sandwiches - core and slice so it looks like a donut - put nut butter in between
Nuts - toasted cashews are their new favorite, pistachios are fun to "crack"
Smoothies
Popcorn with Bragg's Spray
Ready to eat packs of Indian Food - with steamed bag of brown rice
Vegetable soup
Nuggets - Quorn Nuggets
Black beans & rice (microwave or freezer rice, can of Bush's Seasoned Recipe Black Beans)
Bean salads
Frozen fruit on a stick (pineapple, grapes, strawberries, blueberries)
Homemade popsicles
Cereal (Uncle Sam, Shredded Spoonfuls, Puffins, Grape Nuts, Trader Joe's or Whole Food's Wheat Squares, several other cereals that are minimally processed & sweetened with fruit juice, etc.)
