I'm Hungry / Potato Chips

We laugh at my five year old who says with a very southern drawl, "I am hun-gar-ee."  We've corrected her, but honestly we think it's cute and she's growing up WAY to fast as it is these days!

Lately I have been really hungry!  Clearly my body is used to having too many "false fillers & substitutes" for whole foods.  Replacing it with only vegetables, fruits, legumes, whole grains, etc. leaves you wanting more goodness more often!  AND whole foods go right through you to keep your body fueled and your systems functioning ;)!


I told my friends who are doing the challenge to expect eating often!   I needed the reminder too!

Dawn & I wrote the following blog together almost 2 years ago, but it still holds true!  Lots of great suggestions on what to eat!


Also, I made homemade potato chips for dinner.  Forgot to snap a picture but will try and remember next time!

Homemade Potato Chips

One organic russet and one sweet potato
Parchment Paper
Salt & Pepper 
Cinnamon

Preheat your oven to 410 degrees.  Cut potatoes into very thin slices.  Place in a single layer (do not double up) onto baking sheets lined with parchment paper.  Sprinkle salt & pepper on white potatoes and cinnamon on sweet potatoes.

Cook for 7-8 minutes on one side, then flip the chips and cook another 10 minutes.  We like ours crispy, so I will let them cook a little longer if they aren't the texture we like.  Just keep watching them so they don't burn!  

I dipped mine in homemade guacamole tonight :)
