Orange & Pepita Granola

This granola recipe is delicious and super easy to make!




Dry Ingredients:
3 cups raw, rolled oats (use gluten-free if you have a sensitivity)
1 cup shredded or flaked coconut
1 cup raw pepitas (pumpkin seeds)
1 cup raw almonds, roughly chopped
2 oranges, zested
1 teaspoon fine ground sea salt

Wet Ingredients:
3 tablespoons fresh orange juice
3/4 cup maple syrup
1 teaspoon vanilla extract

1.  Preheat oven to 300 degrees F.
2.  In a small bowl, stir together wet ingredients.
3.  In a large bowl, stir together dry ingredients.
4.  Add wet ingredients to dry and fold well.
5.  Line 2 baking sheets with parchment paper & spread granola evenly on the sheets.
6.  Bake the granola for 20 - 25 minutes, stirring after 10 minutes.
7.  Remove from oven and let granola completely cool before putting it in containers.
8.  Serve with yogurt, milk of choice, or eat plain as a snack!
